Jalebis are freshly fried on-site in large iron kadais or deep frying pans of bubbling oil and soaked in warm sugar syrup at a rural Rath Yatra Festival fair at Tehatta, West Bengal, India, on July 16, 2026. The South Asian variety is made by deep-frying a batter of maida flour (plain or all-purpose flour) into pretzel or circular shapes, which are then soaked in sugar syrup. Stalls often serve a specialized Bengali version of jilipi or Jalebi, which are thick, crispy, and syrup-drenched. Alongside hot jalebis, Rasgulla (syrup-filled ball), Angul Goja (also known as Murali or Khurma), and Gulab Jamun Sweets are being sold by the roadside.
