Giant taro - Alocasia macrorrhizos - Agriculture - Traditional food

A farmer digs up the corm and underground rhizomes of a Giant taro (Alocasia macrorrhizos) plant and peels off the skin with a sickle in Tehatta, West Bengal, India, on October 20, 2025. The fleshy stems and underground rhizomes of the plant, which is native to rainforests of Maritime Southeast Asia, New Guinea, and the Murray Islands group in the Torres Strait of Australia, are harvested by rural communities and consumed as a vegetable after prolonged boiling to destroy toxic needle-like calcium oxalate crystals. While trying to pull up the plant, spiders, snails, and earthworms are discovered living inside it.
