Soybean and gypsum are used as raw materials in the production of tofu, and the process is as follows: soaking bean, grinding pulp, filter residue, boiling pulp, blending and forming. Tofu is a favorite daily food. In 2014, "Traditional tofu making technique" was selected into the fourth batch of representative projects of China's national intangible cultural heritage.
