Que Qingju, a resident of the Bajiao Dong ethnic group, is cauterizing a beancurd skin in Enshi city, Central China's Hubei province, Jan 30, 2024. Beancurd skin is a must-have special food for local people to celebrate the Spring Festival. Villagers use rice, corn, mung beans as raw materials, mixed and soaked in a certain proportion, ground into pulp, and spread it in a pot with a special funnel to bake it. Tujia and Miao people dry and store this local food with a strong flavor of the New Year for eating during the Spring Festival.
